The Café is inspired from native Australian ingredients, with some featuring in the adjacent bush food garden. Our Head Chef Thomas Erkelenz was welcomed to the team in April 2019 and he has continued to showcase these amazing and versatile ingredients.
Thomas’s style of food can be summed up as ‘less is more’ with a focus on creating well structured, intelligent dishes that try to highlight the best qualities of the ingredient and always drawing heavily on what is in season and a strong focus on technical cookery both in a modern and traditional sense. Thomas is continuing to develop menus that incorporate native Australian ingredients in a Modern Australian context, and foraging from the surrounding country wherever possible.
Chief Winemaker and Proprietor, Neil Paulett, has described the transformation of cellar door to incorporate a dining experience as a "dream come true". The Clare Valley has an enviable reputation world-wide for quality wines and more recently has become a burgeoning haven for food and wine experiences. "We are enjoying being an integral part of this force".
